Yummy Salad with Rice

I've also posted this on the blog. This is another great lunch idea that you can bring to school and eat at room temperature. Use any proportions you want; this is just what I used.

1/4 c cooked Trader Joe's tri-color sprouted rice
1 c chopped raw cauliflower
5 Greek olives, sliced
Half an avocado, chopped
1 tbsp. goat cheese (optional)
Toasted pumpkin or sunflower seeds (optional)
Any other vegetables you want, such as cucumbers, cherry tomatoes, etc.
Olive oil & balsamic vinegar
Salt & pepper
