Used Lori's recipe. Substitutions:
1.5 c maple syrup instead of sugar
Less salt b/c Pamela's has salt
Pamela's flour. 3 cups, not 2
Sliced almonds instead of walnuts
Cupcakes were incredible! Just sweet enough! My test cupcake was a little greasy (puddle of coconut oil in the bottom of the tin) so I added more Pamela's to the rest of the batter. That's how I came up with the 3 cups Pamela's adjustment.
